Sugar Season
(temps des sucres) is one of the oldest of Quebec culinary traditions. Sugar Shacks are used for the production of Maple syrup. Many are open to the public to experience this culinary tradition.
Quebec Tradition
During springtime, when the maple tree sap has started to run - many Quebecers go and visit the famous sugar shacks (cabanes à sucre)
for a traditional meal that features eggs, baked beans, ham, and bacon, cooked in Maple Syrup.
The Experience
Many of the public activities one can partake in include learning how maple syrup is harvested & made, tasting yummy maple treats or taking a traditional horse-drawn sleigh ride through the maple trees.
Maple Treats
Maple toffee is a sugar candy traditionally made on snow
(tire sur la neige) — boiled maple syrup poured over snow, which then hardens, and is eaten as a yummy treat Quebec style.
